Homemade Date Syrup

Ingredients
  

  • 1 pound dried Medjool dates pitted
  • 4 cups water

Instructions
 

  • Finely chop the dates using kitchen shears (or a sharp knife)
  • In a medium sized sauce pan over medium heat, simmer the chopped dates in water for about 20 to 30 minutes. Stir occasionally and cover with a lid to conserve the liquid
  • Remove the simmered dates from the heat and allow them cool for another 20-30 minutes
  • Once cool, pour the mixture into a blender and puree for about a minute or two, until smooth
  • Strain the mixture over the saucepan using a mesh strainer plus cheese cloth, a nut milk bag, or nylon stalking* Squeeze all the excess liquid so that you’re left with the syrup in the saucepan and just the date pulp in mesh
  • Thicken your date syrup by simmering it again over medium heat for another 30 minutes. Remove from the heat and let it cool completely. Store in an airtight glass bottle

Notes

The date syrup can be stored in the refrigerator for up to about 3 weeks.
*Nylon stalkings are a cheap and highly effective alternative to a nut milk bag. Cut one leg of the stalkings at about 6 inches above the toes and use it to strain any cool to room temperature liquid.
